click here Nothing says homemade like a casserole. But it’s hard to find ones that are gluten free. So I decided to take this recipe for Baked Penne with Roasted Vegetables, and simply replaced the penne with a package of quinoa (cooked in veggie stock for more flavor). The result was a delicious and filling vegetarian dinner that is perfect for transitioning into Fall….
Note: If you want to make this vegan, you can just omit the cheese and serve the roasted veggies in top of the quinoa. It’s just as delicious and filling.
